What you need

Ingredients

  • 2.5 lb pork tenderloin, trimmed
  • 1 each full batch Lower-Sodium Homemade Jerk Marinade
  • 1.5 lb little potatoes, quartered
  • 24 oz broccoli florets
  • 20 oz Peppers and Onions Blend
  • 2 oz Lime Juice
How to make it

Directions

  1. Marinate pork at least 4 hours or overnight.
  2. Roast potatoes at 425°F until tender and browned.
  3. Roast or grill pork tenderloin until safely cooked; rest before slicing.
  4. Cook vegetables until tender and roast peppers/onions if using.
  5. Divide into 6 containers and add lime after reheating.
