What you need

Ingredients

  • 2.5 lb chicken breast, cubed or cut into strips
  • 1 each full batch Lower-Sodium Homemade Jerk Marinade
  • 24 oz broccoli florets
  • 1.5 lb little potatoes, quartered, or about 3 cups cooked brown rice
  • 1 tbsp olive oil for roasting potatoes, if using
  • 1 tsp black pepper
How to make it

Directions

  1. Marinate chicken for at least 4 hours, preferably overnight.
  2. Roast potatoes at 425°F until browned and tender, or prepare the chosen rice.
  3. Grill, roast, or air-fry chicken until fully cooked. Let it rest briefly, then slice if needed.
  4. Cook broccoli or green beans until tender.
  5. Divide starch and vegetables among 6 containers, then add the jerk chicken. Finish with lime after reheating.
