  • 2.5 lb 90/10 or 93/7 ground beef
  • 2 each large eggs
  • 0.75 cup breadcrumbs
  • 0.5 cup finely diced onion
  • 2 tbsp dried minced onion
  • 2 tsp onion powder
  • 1.5 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp dried parsley
  • 0.5 tsp dried thyme
  • 0.5 tsp salt to start
  • 1 tbsp Worcestershire sauce
  • 0.33 cup Ketchup
  • 2 lb Yukon Gold or russet potatoes
  • 0.5 cup lite sour cream
  • 0.5 cup Fairlife milk
  • 1 tsp garlic powder
  • 1 tsp Salt
  • 2 lb green beans, frozen or no-salt-added canned
How to make it

Directions

  1. Heat oven to 350°F. Combine meatloaf ingredients gently; do not overmix. Shape into a loaf.
  2. Bake until the center reaches a safe internal temperature. Add glaze near the end if using.
  3. Boil potatoes until fork tender. Drain, then mash with lite sour cream and enough milk to reach the desired texture.
  4. Cook green beans until tender.
  5. Serve family dinner. Portion remaining meatloaf into 5-6 oz cooked servings with 1/2-3/4 cup mashed potatoes and green beans.
  6. Refrigerate 2-3 portions and freeze the remainder.
