Chicken Philly Potato Bowls

Ingredients

  • 2.5 lb chicken breast, diced
  • 904 g little potatoes, quartered
  • 250 g white onion, sliced
  • 454 g broccoli florets
  • 7 slice provolone
  • 3 g salt for chicken
  • 4 g black pepper
  • 4 g garlic powder
  • 3 g onion powder
  • 2 g smoked paprika
  • 350 g nonfat Greek yogurt
  • 20 g grated Parmesan
  • 15 g minced garlic
  • 15 g yellow mustard
  • 10 g lemon juice
  • 120 ml low-sodium chicken broth
  • 1 tsp black pepper
How to make it

Directions

  1. Roast quartered potatoes at 425°F for 30-35 minutes, flipping halfway through.
  2. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Cook chicken in a skillet. Add sliced onions halfway through and cook until tender.
  4. Steam broccoli until fork tender.
  5. Lay provolone over the chicken and onions. Cover briefly until melted.
  6. Whisk Greek yogurt, Parmesan, garlic, mustard, lemon juice, low-sodium broth, and pepper until smooth.
  7. Divide potatoes and broccoli among 7 containers. Add chicken and onions. Keep sauce separate when possible and add after reheating.
